Analysis of turbidity and stability of the protein in the wine
The clarity is a determining factor in the assessment of a wine and is one of the features that consumers pay more attention. During the various stages of the winemaking process, the turbidity is one of the parameters that are controlled with greater attention.
The turbidity measurement allows to objectively evaluate the effect of a treatment clarifier than another and thus give beginning to the fermentation of the must ” clean “according to the criterion of the oenologist. In addition to the index of clarity, it is important to determine the stability of the wine in time, ie its ability to maintain its clarity during storage in the bottle. On the market are traceable various systems of prevention, such as the clarification (or bonding), the filtration, decanting, and more. All of these systems are, however, some common problems, such as the risk of overdose and the cost of various substances, such as bentonite, silica, casein, albumin, gelatin, tannin. To assist you during these important stages, HI 83749 HANNA Instruments has developed a tool that is both precise and reliable turbidity and an indicator of protein stability (Bentocheck).
Bentocheck The system makes it possible to accurately determine the protein stability of the product in processing and evaluating the right amount of bentonite to be added to the wine to ensure quality and stability over time, thus achieving a significant economic savings, since the less waste of reagents. Thanks to the “Fast tracker” you can store the readings taken at different times even on different types of wine, without having to worry about transcribing pads and their location.
HI 83749 is also equipped with a back-lit display for use even in low light, a USB port for fast data transfer to a PC, the function AVG (average) which allows for greater repeatability of readings, and function of GLP (Good Laboratory Practice).
