Potassium is the most abundant alkali metal between the minerals present in wines. To avoid this, the wines are subjected to a treatment of cold stabilization and the addition of crystallization inhibitors, such as for example the acid Metatartaric. Knowing the values ​​of the potassium and tartaric acid, it is able to determine with a good approximation the degree of tartaric stability of the wine, and thus evaluate the danger of tartaric precipitation.
