The fluoride content in the wine comes mainly from the treatments in the vineyard on the basis of cryolite (a fluoride salt, sodium aluminum used as a pesticide). Usually these treatments are repeated several times during a season, with the result of making the content of fluorides often too high, a condition which can cause serious problems both during alcoholic fermentation, both in the later stages. Fluorides in fact have an inhibiting action against urease, an enzyme that fights the formation of ethyl carbamate (EC), a carcinogen that is spontaneously generated between urea and ethanol in wine. For this reason, the law prescribes that the maximum level of fluoride in wine should not exceed 1.5 mg / l (3 mg / l in the U.S.). With HI 84184 you can control the content of fluorides in a fast and accurate, thanks to the ISE method with standard addition. The instrument is supplied complete with everything needed for analysis: ISE half-cell electrode, reference electrode, temperature probe, reagents for 20 tests, electrolyte solution, pipette, beaker.
